Got Zucchini?

We do.. We have Zucchini coming out our ears. Jason's parents have a garden so his Mom keeps us stocked in fresh produce. Zucchini being the 3rd top veggie we get from them. I had never made anything with Zucchini before so I hopped on Google and All recipes.com and found some recipes.. Oooh and My grandma gave me a recipe of hers that I have always loved.. Not sure if She made it up or got it somewhere.. But I'm going to share it..



Zucchini Bread

I got this off allrecipes.com. This is the best Zucchini bread recipe that I've ever had... :)



3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
3 teaspoons ground cinnamon
3 eggs
1 cup vegetable oil
2 1/4 cups white sugar
3 teaspoons vanilla extract
2 cups grated zucchini
1 cup chopped walnuts
Directions
1.Grease and flour two 8 x 4 inch pans. Preheat oven to 325 degrees F (165 degrees C).
2.Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
3.Beat eggs, oil, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour batter into prepared pans.
4.Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean. Cool in pan on rack for 20 minutes. Remove bread from pan, and completely cool.



Zoulash


(I made that name up since it was nameless)


Don't let this picture fool you LOL it really is YUMMY!!! My 5 year old didn't want to eat it because it looked like "Bomit" (vomit) but I made him taste it and he ate every bite!



2 pounds of ground beef or turkey
Some dried minced onion cooked with the ground beef
1 can of corn
1c. of chopped or cubed zucchini
1 jar of spaghetti sauce
soy sauce.. I used probably about 1/4 cup but I LOVE soy sauce.. just
give it a "generous" amount

Directions:
Brown hamburger and minced onions, drain.
Add Spag Sauce, Corn (drained), zucchini, and soy sauce.
Return to stove and "cook" til its all heated up.

I just let mine heat up until the corn bread was done.

The picture doesn't look appetizing but I assure you it IS!!! :)


Fried Zucchini

I just took about 1/4in slices.. dipped them in egg and a lil milk and covered them in flour. They were okay but next time Im going to batter them in cracker crumbs..
